Pork & Anchovy Meatballs

You’ll need the following to make X1 Sal Serving (NB This is a portion I would consume, please edit the portion to your dietary needs):

MEATBALL MIX

  • 20g White Breadcrumbs
  • X5 Anchovies
  • 250g Lean Pork Mince (X4 Meatballs)
  • X0.5 Lemon zest
  • X0.5 tsp dried thyme
  • X0.5 tsp coarse black pepper
  • Salt

THE OTHER INGREDIENTS

  • X0.5 Chicken stock cube (150ml)
  • X8 Sprouts (you could use broccoli if you prefer)
  • Rice (I eat 250g cooked)
  1. Mix all the meatball ingredients in a bowl
  2. Make the mixture into meatballs
  3. Grill the meatballs for 15 minutes (mid rack)
  4. Start steaming the sprouts
  5. Place heated rice in a bowl and serve meatballs and sprouts ontop
  6. Add boiling water to the stock cube, mix and pour into the bowl
  7. EAT (you can sprinkle parmesan on if you desire)
