Chicken Jamabalya

(Serves 2)

Ingredients:

300g Chicken Thigh Meat

200g Prawns

X1 large Onion

X1 Red Pepper

X2 Glove of Garlic

200g of half a can of chopped tomatos

150ml of Chicken Stock

Tbs of Cajun seasoning

Tsp of ground black pepper

X3 tbs of Tabasco

Salt to season

400g Rice

  1. Soak the rice overnight
  2. Pan fry chicken in a tablespoon of oil
  3. Once golden add garlic and onion
  4. Fry for a couple of mins then add pepper and seasoning
  5. Cook for 5 mins then add chopped tomatoes, rice and chicken stock.
  6. Simmer for 20-25 mins (don’t boil)
  7. Take the pot off the hob and add the prawns, leave for 15 minutes sturring time to time 
  8. Serve and enjoy
